🍩 Golden Homemade Sopaipillas with Pumpkin

Ingredients:

  • 150 g cooked pumpkin (yellow pumpkin or sweet potato)
  • 500 g flour
  • 80 g butter or margarine (room temperature)
  • 10 g salt
  • 10 g baking powder
  • 50–100 ml water (preferably from boiling the pumpkin)

Preparation:

  1. Mix all the ingredients in a large bowl.
  2. Knead until the dough is smooth and elastic.
  3. Roll out the dough on a floured surface and cut circles (you can use a cup or cookie cutter).
  4. Poke each circle with a fork to avoid bubbling.
  5. Fry in hot oil until golden brown on both sides.
  6. Place on paper towels to remove excess oil before serving.
